Tuna Cakes



    While watching The Food Network I saw a tuna spread that looked really good. It's lunch time here so I decided to make me and the littles something with tuna. I looked up a few recipes for tuna cakes and couldn't find one that I had all of the ingredients for, so I decided to make my own! Do they not look delicious?!

    I was actually pleasantly surprised as how good they turned out! I am one to always follow recipes and only tweak just a little bit, I have never ventured away and made my own recipe!

Ingredients:
  • One 5oz can of tuna. (I used what I had- packed in water)
  • One egg
  • One slice of bread, roughly chopped
  • Pinch of garlic salt
  • Pinch of dried cilantro
  • Pinch of onion powder
  • Few squirts lemon juice
  • Forkful of Sun dried tomatoes (mine were packed in oil) roughly chopped
  • Salt and pepper to taste
Directions:
    Mix all together in a bowl. Warm up a tsp oil in a pan. Pack into two nice sized patties, and brown on each side. I did about 5 minutes on each side.

   I split one between the babies and ate one myself, I could have eaten both they were so good! I just happened to have the sun dried tomatoes in my fridge, and I had big chunks in my patty and it was amazing. I am sure you could leave them out if needed.
    The cakes stayed together amazingly, and were delicious!  Both babies ate all of theirs, so I am guessing I get thumbs up from them too! Try them out and let me know what you all think!!!

My first wall art.

    Today we were stuck in the house because of the Winter Storm. I decided to make some wall art. Here is what we did! My first Cricut wall art that I made! :))) I think it turned out great! Granted I had some problems with my machine at first, in the end it all worked out!
    I also know that my husband isn't a certified cricut machine worker- but he took my machine apart and fixed my machine!! I love him so much! Although if he had broken it more than it already was, I would have been able to get a new machine! ;)

Two week wait

    For those of you that I talk to frequently, Lee and I are trying for another baby. We've decided that now is a good time to start. Natalie will be at least 18 months old, and we think that is a good age difference.
    Now, I know that things don't happen over night, but with Natalie they basically did. We had a miscarriage only a week after finding out we were pregnant the first time, and decided it would be a good time to actually try for a baby. Only a month later, we found out we were pregnant with Natalie. Didn't take us long at all!
    Well, we started trying this month. I've waited the long two week wait- and because we didn't have a "two week wait" with Natalie, I didn't know how long and excruciating that wait is! Anyway, I decided to cheat and I tested yesterday afternoon, really thinking that it would be a BFP! It wasn't. But I wasn't too upset, because it was the afternoon and I am suppose to test in the morning... blah blah blah. I decided I would wait a few days and test again... I really thought that I was pregnant!
     I get up earlier this morning to change Natalie's diaper, and felt it! For those of you who have "felt" what I am talking about, then you know how I felt knowing that this wasn't the month that we got pregnant.
    I haven't gotten upset, but I am not sure it has sunk it. But of course, this just means we get to keep trying and it also means that Natalie will be older when we do have another baby.
    God will let us know when the right time is- so until then. Just keep trying. :)
    I will try to keep everyone updated with our journey.

Strawberry Cupcake Fiasco.

    I have been wanting some strawberry cupcakes since Mary came home from daycare with a strawberry cupcake that was out of this world! Monday I almost bought a box of mix to make some and found out that where I was- there was no cupcake pan. (Thanks Lolly) As well as having a tight budget- that $2.39 for a box of cupcakes was just too much!
    I decided to look up a recipe last night for homemade strawberry cupcakes, and voila I made cupcakes!



    Of course the pictures are just awful- I am an awful blogger, I always forget to take my pictures when I am done! I did take some during the process but just random ones that mean nothing!

    See how random this is?! I actually took this picture to show the massive amount of counter space I have to work with! Isn't it just grand?!
    This one was pretty cool. Do you see the lovely pink batter?! I didn't add the food coloring to make them turn the wonderful pink color they should be, and I actually thought that this would have been enough. However, it was not.
    Here they go into the oven! Mmmm, at this point I was about jumping up and down with excitement! You have already seen the end result, I found another homemade recipe and made some chocolate frosting- which is very decadent. :)

    At the end of my baking and frosting, I had a massive headache and didn't even want to think about eating a cupcake. About an hour and two advil later I was ready to taste these wonderful decadent cupcakes I've waited an entire week for!
    To much of my dismay- they were icky. One they taste nothing like strawberry, although my sister says they do. Two, they tasted rubbery or something. Like.... ICKY. =(
    Now I am wanting to go buy a box of strawberry cupcake mix, and make some good ones!

Scrapbook #3

   
This week's challenge was to include a snowman. I thought this project would be even harder than last week's, but I think it's the best yet! =) I will say- I can not wait until we have the room to get the desk I want, I am getting tired of doing my projects on the floor in the living room.
    I am uploading this to FCCB for the "Use a snowman" challenge. 

    I used The Cricut Craft Room basics cartridge to cut the top hat, the Lyrical Letters cartridge to cut "Warm Thoughts" and the nose, and Opposites Attract to cut the snowman.
I found some matching ribbon to make the scarf and had a few snowflake stickers to finish it all off. =)

Scrapbook #2

I have to say: this page is very simple. We have 3 pictures that I want to print out and put on here. I also must admit- I could think of nothing to do. I have no inspiration. Considering Alabama doesn't have much of a winter, and I am on a tight budget, with no craft money right now...It was difficult to come up with anything to do. But here is my page that I am entering into the challenge at FCCB.

I used the cartridge Lyrical Letters to cut out "winter" and cut out "brr" the snowflakes are from a sticker sheet. It's not amazing, but it is cute. :)

    This week has been pretty slow going. I haven't been writing my "to do" lists, but I have been cleaning up around the house. I haven't stuck to my morning routine that I originally planned, and I should really start doing that! I was reading another blog, Moneysavingmom.com, that has been talking about time management, and starting a morning routine. One thing that it says to do is write down your morning routine and putting it up all over the house. I think I will try this today. =)
   Natalie hasn't done anything new and exciting, except SLEEP!  I don't want to jinx our new sleeping arrangements, but she has slept in her pack n play every night this week from around 7pm to 6am. We had dinner at Lolly's house last night, and I was really scared that it was going to mess up our schedule, and low and behold.. she fell asleep at 7, woke up at 8, we headed home, I got her in bed at 9 and she stayed there until 6 this morning! I was so proud! The real test will be this weekend when we go up to the hunting camp.
    I've gotten to spend most of the week with my little sister, and it's been fun. Very grateful for the help I've received when going to get Mary. I miss the time that we've been able to spend together. She's 11 weeks pregnant so that is always fun! =) Natalie will have a new baby cousin soon and then we're hoping a new baby brother or sister not too long after that! Cross our fingers we find out soon. =)
    The hubby is out of town this week, and tonight will make it officially the longest we've been away from each other. I miss him so much. He is trying to fill our freezer with deer meat, so I cannot complain too much. I actually already have plans for some of that meat! I've made a list of freezer meals that I can't wait to make!!! My grocery list is a mile long!!!! It will probably take me a few weeks to just get my list done. Probably doesn't help that we have a big trip planned for next week.
    Lee's oldest brother's birthday is in a few weeks, and the only thing that he wants is for his brothers to be there, so we are planning a weekend in Huntsville! I've only been there once so I am super excited to go back! Although, I really want to move to Huntsville, so this will probably just intensify the urge!
    I have to go now, to start laundry for the day. Until next time.

Natalie's 9 Month Check Up

**** There was a lot of controversy about this post on my Facebook page. I would like to say that I am in no way bashing the doctor, her profeasionalism, or her as a person. I also would like to say that I never once said that I was personally attacked by the doctor. I am simply saying, in short, that I would like this doctor to be more personal on her response to my concerns and to my child. No, I don't expect to "hear what I want to hear" at every visit or at all. But I also don't want to hear what is "right" for someone that is not MY child. Just because someone that is the same height and weight as Natalie is should drink 32 ounces a day- doesn't mean my daughter should. Now does this make me a bad person for questioning these types of things? Also hearing someone's bad experience with a doctor will always over rule your great (personal) relationship with said doctor. And thus, I am going to do as I feel best for my child and find her another doctor whom I will feel comfortable with. Someone that I will not have to question about their ways when I leave the office. Thank you. ****     



    Has anyone been to a doctor that just never tells you the things you want to hear? Or doesn't do the things you want done? Or anything personal about YOU? Natalie's doctor just seems very impersonal to me, and I am not so sure I want to continue going to her. We go to the doctor for a check up, and express some concerns we have about Natalie eating, the rash on her legs, and a bump that has shown itself on the back of her head.
    Natalie has never eaten more than 24 ounces of formula during the day- never has she eaten more. As much as we try to get her to eat more, she just won't do it! I express my concern to the nurse, thinking that she isn't eating enough, but she eats a lot of real food, anything that we eat, she eats. The nurse told me that it is normal for them to not eat as much formula once they start eating real food. Okay, so I am feeling better about myself, because hey! this girl can eat, just not formula. The doctor comes in and tells me that she's gone from being in the 75 percentile to being in between the 25 and 50th percentile for her weight. Okay, so she crawls all over the place, do you expect her to gain a pound a week?!
     The doctor then starts writing down all that she should and shouldn't be eating and doing now that she is 9 months old. Starting with::: drinking 32 ounces of formula a day! UHM... that is 8 ounces more than what she will max out on now! How do I force her to drink 32 ounces?! Anyway, so I start shaking my head as she's writing this and say she won't eat that much. Would you like to know her response? "What is she going to do starve herself?..stop feeding her people food, it doesn't have the calories that formula has."
    Okay, let me see if I have this right... YOU want ME to stop feeding her real food, good food, not junk, and force feed her 32 ounces of formula...then in 3 months time completely stop feeding her formula and start feeding her real food again? Not no but HELL NO. Sorry for the profanity, but good gravy!!!
    Someone please tell me I'm not in the wrong here? Natalie barely finishes her 4 ounce bottles, how am I suppose to feed her more than that? When she's hungry we feed her, she's not starving. I just feel like the doctor is being very generic, and not focusing on how Natalie actually eats. They did her blood work yesterday and said that everything looks perfect, so she's obviously healthy.
    The rash on her legs, I was told was just dry skin, dove and lotion lotion lotion is the prescription. The bump we've noticed on the back of her head, is because her, and I quote "head is shaped funny, and will even out eventually." Her head is NOT shaped funny, it's perfect! 
    On a good note- Natalie is a whopping 18.2 pounds and 28 inches long! Nothing is wrong with her, at all. Completely healthy, and very happy. Just 3 months until our baby girl is one year old!

Scrapbook #1

    I started following a blog when I bought my Cricut die cutting machine, and it lists "Cricut Challenges' every Monday. I decided I will use these challenges to challenge myself to start working on my scrapbook! I have finished my first (VERY FIRST) scrapbook page, all thanks to Fantabulous Cricut Challenge Blog! 
    I must say, it was quite the challenge trying to make a scrapbook page while keeping the little ones off of my mat! Thankfully I had Lolly come over for a few hours and kept Natalie busy, while the others napped.
    The challenge was Use a Sentiment, and the CCR has a Valentine cartridge for free this week. Please note that the picture being used is only for challenge purposes, after Valentine's Day I plan to have another picture put there.

I used Opposites Attract, Love Struck 2012 and Cricut Craft Room Basics.


I have to say, seeing as it is my first scrapbook page, I am pretty happy with it. =))

Don't slip!

    I am going to brag on myself a little bit, I was able to cross off quite a bit on my list of things to do yesterday. I only lack just a few things! I probably would have been able to cross everything off of my list, because I was very motivated yesterday, but I decided it would be more fun to slip and fall!
    When going to pick up Mary, I came across a layer of ice on the ground, and instead of walking around it, I walked over it. I actually thought it was water, boy was I wrong! I was holding Natalie in my right arm, and fell on my left side. I woke up this morning and feel like I've been hit by a mack truck! Natalie didn't get hurt, THANK GOD! That is the scariest part when not able to control what is happening. I made sure I had a good grip and kept her away from the ground.
   This morning has been fun already without the help of the aching. I was able to use Natalie's new cloth wipes on a poopy diaper, which worked amazingly well! Bella came in covered in juice, so we have a naked baby running around while I wash her outfit. THEN, Natalie got into the dog food, again, except this time she knocked the whole bowl over whilst sticking handfuls into her mouth. EWWWW.  Exciting morning, huh? Haha.
    I am really hoping that I have the same motivation today to finish my list, which isn't much but I will have to be creative.
Things to do today:
  • Finish cleaning bathrooms
  • Vacuum
  • Work on scrapbook
  • Get rid of 7 things
I have dinner in the crock pot and the kitchen is still clean from yesterday. Very exciting! =)

The long list of "to do's"

    I am pretty sure my to do list just keeps on growing, and it's not shrinking! I suppose this is mostly my fault considering I've done nothing of what I need to be. Natalie hasn't been feeling well, so I suppose I could say that I have been taking care of my boogie bear, but that is no reason why my to do list is a mile long!
    Thankfully though, I have nothing planned for the days ahead and maybe will get my list done by the end of the weekend. *crosses fingers*
    Things to do::
  • Clean kitchen
  • Natalie's laundry
  • Clean Natalie's room
  • Clean bathrooms
  • vacuum
  • Clean baseboards
  • Work on Scrapbook challenge
  • Go thru all dressers
  • Wipe down door handles
  • Make cloth baby wipes
  • Clean light switches
  • Dust celing fans and light fixtures
  • Get rid of at least 7 things, by the end of the week. 
    Do you see how my list is growing?! All of this needs to be done by Sunday afternoon, along with teaching the babies, picking up Mary the rest of the week, fixing dinner, and all of the other daily chores that need to be done.
    Think I can do it?! I surely hope so!
   
    The Scrapbook Challenge will be a post in itself, if I ever get to starting it! As well as the cloth baby wipes. =)

Tuesday, January 6.

    This past weekend has been crazy busy. I decided last minute that Natalie and I would go camping with Lee and the family and boy am I glad we did! We had a blast camping out with all of the hunters. Natalie got to wear her "bear" suit, and we got to eat yummy chicken!
   Lee woke up and went hunting Sunday morning, and we kept telling him to not get a deer, because apparently- telling him to get one wasn't working, within the hour he texted me saying he got a 4 point! Finally we will have meat back in the freezer, I was beginning to get worried! It's not the biggest deer, but it will give us some meat for a few months. I am really hoping he gets at least two more, so we will be set for the year or longer! Look at how happy he is:




    To add to all of the excitement; we were getting ready to leave the camp and head home when we found out that Natalie cut another tooth! This is 7 for those keeping up! =) My beautiful 9 month old little girl is growing up and will have a mouthful of teeth soon!
   So we were able to come home and add two things to our memory jar! I was actually worried we wouldn't fill our jar, but I am beginning to think it will over flow with all of the great memories we will make this year!
    We were also able to start our 52 week savings plan, and because I get paid on Friday's we've decided that it will be easier to add to our envelopes every Friday. While everyone else doing the savings plan may already have $3, we still only have $1. But we will get there!
    I unfortunately do not have a list of things to do today, but maybe I will decide to get off my butt soon.

Natalie is 9 months old!

    Tonight is the first Friday of the new year! Guess what I am getting into tonight?! Yeah, it's almost 9 pm and I am about to put my butt in bed! Natalie has been asleep for about half an hour, and I am crossing my fingers that she stays asleep in her own bed tonight. The hubby is out at the hunting camp, planning on waking up and getting me a deer! =P
    Yesterday I was able to clean out both freezers, and they look amazing! I realized we didn't have much meat left and I said "OH NO!" We live off of our deer meat. We actually ate through two deer the last year, and that means we need two for this year! Especially if I continue with this budget, I WILL NOT be able to afford meat!
    I also cleaned out from under the bed, which surprisingly didn't have much under it! I am beginning to think that we really don't have a lot of things, just not enough room for the things we have.  I will have to admit, that I didn't do anything today! Okay, by anything I mean no cleaning. I did make dinner for Lolly and the kids, and washed dishes. =) That chicken pot pie was AMAZING!
    TODAY::::: Is Natalie's 9 month birthday! She is growing up so much, I really can't believe that she is 9 months old!! This time 5 years ago do you think that I would be married with a beautiful baby? Okay, yes I figured I would be married with a kid. but you never really think it's actually going to happen! I have an amazing husband with an amazing family, and an amazing daughter. I have an amazing life! I wouldn't change anything in my amazing life.
I mean look how perfect she is?! I love her to pieces!

Back to my lists!

    Alright yesterday was filled with a bunch of nothingness. I had a pounding headache almost all day, Natalie slept a lot, and we had our "good luck" meal at the in-laws. I mean, all in all a good day, but I didn't make any lists, I didn't clean anything, (besides some dishes) and I definitely didn't teach Natalie anything. *boo* OH! I did write some thank you notes and made a memory jar. While writing said thank you notes, Natalie got into the dog food twice, one of which time she ate it. YUCK YUCK YUCK! But hey! There may be some kind of nutrition in it right?! RIGHT?!


    Anyway, today is a new day! I have my things to do list ready, and the kids are blocked off from the dogs, er I mean the dogs are blocked off.
Here is my list:
  • 15 minute clean of the bedroom(s)
  • 15 minute clean of the bathroom(s)
  • clean out the freezers
  • clean from under the beds
  • do at least one load of laundry
  • watch Hooked on Phonics with the littles.
  • start a grocery list (we have NO food)
  • finish writing Thank You notes
  • Find 7 things to get rid of. (Throw away, donate, yard sale box, or list them for sell)
    Yes, my list is long today, but I am hoping my sister will be coming to help watch Natalie. =) The whole cleaning of the house, won't be so bad once we get through the first month. Then I will just have my 15 minute clean ups to do every day. At least, that is the plan.

Happy 2014!

Happy New Year! Last night was so much fun! We were able to see one of Lee's friends that we haven't seen in a few years, and then watched the ball drop with my amazing in laws. I absolutely love that Lee's brother and our sister in law lives right across the street! It definitely comes in handy when needing to get ready for a New Years party!
I am curious to know what everyone's resolutions and goals are for the year 2014?! I have to say for myself, I can't really think of anything great!
I would like to get closer to the Lord, I would also like my marriage to become even stronger than it already is. I married a really great guy! We are planning to have another little one, and I am so excited! Because of this, I don't have a goal of losing any particular amount of weight or anything. My goal for Natalie is to start walking soon! *crosses fingers* As well as stop eating the leaves! =)

Before I go any further I want to look back on yesterday! I did get my refrigerator cleaned out, and this is something I apparently need to do more than once a year. :0
This was my before picture. (I had already started on the door before I remembered to snap a picture.)
Lee makes sure that we don't keep a lot of food we don't need in there so it wasn't too bad, but bad enough. Natalie kept busy in the Tupperware cabinet.
Until it was basically empty, then she was done. =) She gets bored easily like her Mommy.
I am not too sure what all of this was- but there were some dead bugs. It was gross! Never think to clean under the drawers!
The end result! =) Nice and clean, and empty. I did throw quite a bit away that was expired. Lee got home and said : there is no food in here! Yeh, I think it's time to go shopping. ;/ But I am happy with my results. I am suppose to do the freezers today, but I feel like if I start cleaning, that is all I will be doing the entire year! I will wait until tomorrow. =)
Natalie decided to get started on the party early and get into some Bud Light Lime. Hey- she was keeping busy! 


Our day yesterday was filled with all kinds of fun, and messes...


She decided she was a big girl and got her snacks down herself- at least she cleaned up after herself. (For the most part) Good thing for our little hoovers.
